Chocolate Chunk Sprinkle Cookie Cake

This is the perfect back-pocket, holey moley you just whipped that up, surprise/ celebration/ birthday/ co-worker gift/ random Monday suck cookie cake treat! You can dress her up with sprinkles and a piped border of frosting. Or you can keep her classic, with simple chocolate chips. You can stir in whatever partial remains of chocolate chips, M&Ms, chocolate bars, toffee pieces, pretzels, you have in the pantry. There is no wrong answer. She is simple and delicious and will appear to be quite impressive. She tastes wayyy better than her grocery store counter-part.
Here is what you need for a 10 inch round cookie cake.

Batter:
1 stick unsalted butter, softened
150g. Granulated sugar
150g. Dark brown sugar
2 large eggs, at room temperature
2 TBS golden syrup (such as Lyle’s)
200g. All purpose flour
2/3 tsp. Baking powder
2 TBS. Milk powder
7 oz. Dark chocolate chunks or chopped up bar (or whatever add ins you prefer)
2 tsp. Vanilla extract
2 tsp. Kosher salt or sea salt
Sprinkles, optional

Method:
Preheat the oven to 350F and position a rack in the center of the oven.
Grease a 10 inch round cake pan, and line with a circle of parchment paper.
In a medium saucepan, over medium heat, melt the butter. Alternatively, melt the butter in the microwave, in a microwave safe bowl.
Transfer the butter to a large mixing bowl and mix in both sugars. Next, whisk in the eggs, golden syrup, vanilla and salt. Whisk well to ensure batter is fully incorporated. Sprinkle the baking powder and milk powder over the top of the batter and whisk them in well. Then, add the flour and fold in using a rubber spatula. Mix in sprinkles, chocolate chips, or whatever you are using. Reserve some of the mix ins for the top of the batter, as well.
Pour the batter into the prepared cake pan and smooth it out evenly. Press more chocolate chunks and sprinkles into the top of the batter. Bake in the oven for 14-18 minutes. Begin checking at 14 minutes. You do not want to overbake! You want the edges to be browning, but the center should remain soft and slightly underbaked. Once baked, allow to cool on a rack on the counter until room temperature.

If you decide to add a frosted border, prepare some vanilla or chocolate buttercream or even cream cheese frosting!
